We will be travelling from Santiago to Bilbao at the end of our Camino in October. Can anyone suggest the best way of getting there? Thanks.

There is the bus and then the train. The bus company (ALSA) does not allow for bookings as far ahead as October, but I did a search for July 16th (random date) and as you can see above there are 3 buses per day.
