Early May should be about as good as it gets. It is suposed to be possible to follow the Spring flowers and blossom up the route as the weather improves with you as you walk North. You are a little late for that and it is probably like the perfect wave surfing just a story. You will be getting to the high ground in Galicia at the end of May/early June so that should be OK. There are some great towns on the route so plan your days so you have some time to spend in them. Carry plenty of water as the distances are generally longer than the Camino Frances and even in early summer temperatures can get high.
