Villafranca del Bierzo to O Cebreiro is very doable; I actually walked past it to Linares do Rei. Stops at La Faba and OC for some grub and slight rest.
While it was tough it was by no means a mess or a nightmare

I stayed in 4 Albergues with the pool on Frances. There are plenty more. Tell your daughter to bring her swimwear and enjoy the dips. Totally refreshing and vigorating after a hot day's walk.

60L IMHO is too big. Folks go with 30 or even a tad lower. I had 35L and that was plenty.
Take the advice above and ho to a store where you can try some on for a good fit
