I would suggest you keep walking from Bilbao, as the next few days from there have lovely scenery, with some wonderful beaches to walk along. If you then take a bus to Baarmonde, you can walk the last 100k to Santiago.

I agree with Metropolly above, that the Norte would be a good route for you, walking from Irun to Santander would give you the space for spirituality, lovely beaches and there are horses, donkeys, etc. along the route.
