Speaking for myself :-
1) Non-camino clothes etc for use before/after the camino
2) Last minute discards when we weighed our packs in SJPdP (goodbye heavy 3/4 length rain coat, hello poncho! )
Your bus from Pamplona to Roncesvalles seems to be your pain point, due to the time of your arrival from Madrid to Pamplona.
I see you are walking the missing links in their original order but could you perhaps get a better fit by walking the Carrion de las Condes to Leon section first and then...

Don't overdo the first few days on the camino, start slow and finish strong.
Do some back to back training walks at home with your planned camino gear (especially pack and shoes/boots).
Work out your own preferred walking/resting...
If you think you could be capable to get to Roncesvaless on your first day after a late start then you should be fine doing a few long stages later in your camino and 31 days will be enough.
But remember, start slow and finish like a hero!
Excellent advice, also allows you to get familiar with some of the different bills in use
(on my first day in Vietnam I paid an amount equal to a Vietnamese month's wages for a small bottle of water - the notes all looked similar to me)
I would make secure bike storage the first priority, and then look for helmet/gear storage at the same place.
Maybe take a bag to put the helmet in to save scratching the face screen in the luggage room? And I use two locks, one on each wheel, otherwise the bike can be moved like a wheelbarrow.

Trains between Spain and Portugal were primitive in comparison, which surprised me because I sorta assumed that neighbouring countries in Europe worked together like states in Australia, and don't try to rent a car in one and return it...
Flying from Sydney we found :-
1) A 24 hr stopover midway to break up the flight helps (if your budget agrees).
2) One or two days in Europe before the start of the walk helps align the body time.
3) Place your walking pack in a duffel bag as checked luggage for flying. It avoids handling damage...
