If I leave Ponferrada early enough to arrive in Villavieja and spend some time at the castle Cornatel, can I leave the next day, spend some meaningful time beholding las Medulas and Orellan, and still get to puente de Domingo Florez?

Yep

You want to visit the galleries and the Mirador at Orellan, right?

But check the opening times for the Castle, they do seem to change them quite a bit. Don’t trust the times as per the notice on the board in the albergue in Villavieja

Check the opening times of the galleries high above Las Medulas. We walked directly there, up the road, off the camino, but they were closed that afternoon, so we went back up again the next morning. It was a highlight of my Invierno camino. It would be a shame to miss them.
