Camino Frances, May/June 2016, from SJPdP.
My partner and I celebrated the completion of our first Camino on June 20 by getting engaged in front of the Cathedral. We are both in our fifties, long past wanting anything to do with diamonds, and are thinking of plain gold bands. What we would like, however, is to incorporate the Camino shell into the bands. We were wondering if any of you artistic types might want to share any ideas you might have on how to do this. Time is of the essence since the €2 rings I bought for the occasion in Belorado are already falling apart!

What a great thing to do. There's plenty of ideas for shell designs if you take a look at Google images and Pinterest.
 
Since you are in Ontario, and while I know it's not around the corner, there is an amazing custom jeweller in Elora. So if you are in this part of the province, it's a beautiful town and worth having a look. But I am sure any custom jeweller could do what you want. A simple engraved scallop shell design would be beautiful.

This is not as artistic a solution, but would probably be quicker: Opt for simple wedding bands but have the image of a shell inscribed inside the ring, along with dates, sentiments, etc.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
