Maybe not the answer you want, but here goes.....
We stayed two nights in Burgos and got a room at the el Cid hotel. It was not cheap, but we planned three splurges----the Parador in Santo Domingo, the Parador in Santiago, and the el Cid.
We got a room overlooking the catherdral, and had a half a roast goat for dinner. One of the highlights of the trip, for sure. Other places run together, but we remember that one well.

Hotel Jacobeo operates a pilgrims' albergue on the other side of the street facing the hotel(inquiries at the hotel desk).
It's on the way in once you've entered the old city(you will see the sign on the sidewalk). Good accommodation, decent price and you can stay two nights.
