I am new to this forum. I plan to walk the Camino in February 2019 for my 50th birthday. My plan is to fly from the US and walk it for 15 days. Where should I start? I am fairly in shape and can walk up to 25 to 30 miles a day. Also, what is the weather like in February?

I would recommend the Frances or the Portuguese if you are planning to walk in February. Many albergues are closed in the winter, and those are the two most popular routes, so you are more likely to find something open. I also strongly recommend you bring a light sleeping bag, because many albergues are not heated properly, and be prepared for a possible snow storm or two if you decide upon the Frances because you will be walking up a few mountains if you choose that route.

Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
I walked the CF in March / April and there was always plenty of albergues to choose from.
If you go in April then the week beginning Monday 15th could get busy as this is Semana
Santa ( Holy Week ). A great time to be in Spain for the processions.
 
Most of the albergues begin to open in April, but it also depends on how you want your Camino to be. In the colder months, there will be less pilgrims, and maybe solitude so you can reflect might be what you're looking for. If you're looking to meet more pilgrims, then you will definitely run into more in the warmer months.
