Matins and Vespers in Santiago itself are plainsong I believe. Is this every day or does it vary? (the music not the service)
 
The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
When I was at Samos (a Benedictine monastery), vespers were sung. At the little priory church in Rabanal del Camino across from the CSJ albergue, vespers were also sung and, although it was only with 3 monks, it was a memorable experience. The nuns in Sto Domingo de la Calzada and Leon sing vespers as well.
 
Vespers at the church in Rabanal del Camino was really beautiful. Although there were only three monks, the congregation knew the responses and the service was wonderful. We were there on the first anniversary of the death of a dear friend of ours who was the choir director at our parish, and hearing the chants and thinking of her was one of the more moving experiences of our whole Camino.
