My family and I walked from Coimbra to Santiago de Compostela in July. Our 6 best albergues in no particular order were:
Albergue D.Teresa in Albergaria-a-Velha
Casa Fernanada in Corgo
Albergue Nino in Rubiaes
Villa San Clemente in Tui
O Lar de Pepa in Arkade and
The Passenger Hostel at Sao Bento Station in Oporto.

I only know one of those, and it is certainly among my top 5 out of nearly 100 of them... Casa Fernanda is unique.
 
Casa Fernanda was also one of our memorable places run by the wonderful Fernanda and her husband Jacinto. We also had a lovely stay in Zalbadiki that was attached to the church. Another was in Castrojeritiz that was run by Ramon. He said we had to turn off mobile phones and couldn't get up till he told us. We was woken by the Gregorian chant, coffee and biscuits. A welcoming change to people getting us up at 5.30am.
Just one more though I could go on forever is in Rabanal (Madrid) run by the Confraternity of St James.
Ninho again great apart from walking up at 3am with the cat staring at me that scared me to death. Lol
It is the hosts that make these places special. It also renews your faith in man kind when you meet so many fabulous people.

Last September I also started from Coimbra, and I second that of "O Lar de Pepa". I also want to give a shout out to my favorite albergues along the way (coastal route):

-The albergue in Mealhada had wonderful hosts and great food.
-The albergue in Águeda, a few kms outside of the center had the best breakfast of the entire trip. Very accommodating staff as well.
- A Casa do Sardão, just beyond the city of Viana do Castelo. My favorite of all. That was a magical experience!
