When I start my hike it will be in France. Does anyone know of a good place to get my first stamp/timbre/sello in Hendaye?

You can stop any place in Hendaye to ask for a stamp including the Gare SNCF or rr station. Another appropriate place would be the Hendaye pilgrim albergue on rue la Fontaine. In season they open at 16:00 and have 12 bunks.

Hello, Dash. There is an Eglise Saint-Jacques-le-Majeur in Behobie, about 3 kms from Hendaye. It is the last Eglise St Jacques before one crosses the frontier into Spain. The Paroisse for this church is Notre Dame de la Bidassoa, 7 Rue du Vieux Fort, 64700 Hendaye. Here is a link
