Hola and welcome.
There are FEVE trains from Santander to Oviedo at 9.10 (arr 13.40) and 16.10 (arr 20.40).

From there you can catch the RENFE down to Leon - not sure how far this then is to Santiago.

You can also go on the FEVE again round to Ferrol leaves Oviedo 7.47 (arr 14.09) and 14.47 (arr 21.11). It is approx 125 km from Ferrol to Santiago.

Another alternative would be to catch the ALSA bus from Oviedo to Grandas de Salime (dep 16.00? arr 18.30?) and walk part of the Primitivo. To be within your timescale you might want to catch a bus from Fonsagrada to Lugo and walk on from there (the 100km mark) or Castroverde (121km from Santiago)
(NB: There is no public transport between Grandas and Fonsagrada - 26kms)

ALSA buses also go to a number of destinations from Santander, including Oviedo. In both Santander and Oviedo the bus and train stations are very close together, so easy to 'mix and match'
