www.alsa.es Alsa bus goes from Santiago bus station to Oviedo bus station, [ from Oviedo there is an airport bus service to Asturias airport] it takes about 5 and a half hours from Santiago to Oviedo and costs just under 30€.
www.renfe.es Another option which takes forever is bus to Ferrol then slow feve train to Oviedo.

The FEVE from Ferrol to Oviedo takes 7 1/2 hours. Another alternative depending on time is bus (Freire) to Lugo - 1 1/2 hours, bus (Monbus) to Ribadeo 1 1/2 hours, FEVE to Oviedo 3 1/2 hours. What you might call the scenic route which we take over 3 days but is doable probably in 2, or even one if you can make the connections work. There are a number of buses to Lugo, a few to Ribadeo but only 2 trains per day between Ribadeo and Oviedo. However the airport is near the coast, about 30-40kms north of Oviedo, and the FEVE goes through Pravia where you can make a connection to the station for the airport. If you are just rushing from Santiago to catch a flight, stopping in Aviles might save you some time. But if you are going to take time to visit and enjoy, then my opinion is that hands down Oviedo is the destination for you. It's a beautiful city with lots of things to see and experience.

There is something about that slow, meandering railway journey from Ferrol to Oviedo that I will always hold in my heart. Beautiful scenery, an ever changing population of local and pilgrim passengers, and time to un-wind and picnic and catch up on your notes from your journey. If you are heading for Asturias airport then Aviles is the stop with a regular and in-expensive bus to the airport; assuming that you are on an afternoon / evening flight you will have time for lunch in Aviles. You will need to spend a night in Ferrol, the Feve sets out at the crack of day - it was touch & go whether we would get a coffee from the station buffet before departure. Senor Camareno was not in a hurry even if we were.
 
Yes, the 8.10 and 15.18 go through to Oviedo (change at Pravia for the airport). They arrive in Oviedo at 14.28 and 21.48 respectively.
The other two trains only go as far as Ribadeo 1.30 arr 13.25 and 18.45 arr 21.48. A night in Ribadeo and catch the morning train from there (11.10) to continue to the airport or Oviedo is yet another possibility. This is the train we catch from Ribadeo to Oviedo after visiting Lugo and using the buses mentioned in a previous post above.
Personally we like to reach our departure point the evening before we leave, or at least only a taxi ride/walking distance away in case of any transport problems. But it all depends on the international departure time.

To go back to the second part of your question.
If you are over 60 and buy a FEVE Tarjeta Azul you get cut price train travel which probably makes it the cheapest, if not the quickest, option going from Ferrol.

You don't have to book in advance. The risk is there are no seats left. Usually not a problem except at holidays. You ~might~ get a better deal booking on line.

We bought our tickets in Santiago bus station about a week in advance but looking in my journal I have written bus not very busy, this was the end of may last year but as whariwharangi says if there is a holiday its best to book.
