Start in Valencia.
Parador was itI have walked four of my various Caminos starting in mid April and surprisingly have had very little rain each time. It's been my "lucky" month to start.
P.S. I loved Pontevedra.

You probably meant "Start in Valença". While starting in Valencia would get you a top-notch paella, it is probably not worth all of the extra kms.No problems with April .
Start in Valencia.
Stop in any of the 3 mentioned above , more to see and do in Pontevedra according to HRH
Not a long distance , take your time and maybe the stop is not required.
Some lovely CR and pensions available which will love your company.

On the other hand, if you want to walk the Camino de Levante, Valencia is a great place to start but you'd end up on the Frances in Burgos rather than on the Portugues.
I did the exact same thing. I actually took a couple rest days in Pontvedra due to some tendinitis.We walked in late-March, early-April 2017. We had one day of drizzle a day out of Porto, but rest of walk was in absolutely beautiful weather!
Regarding a rest day, Pontevedra would be a good choice. We also didn’t want a 31 km day so we broke up the Tui to Redondela stage with an overnight in O Porriño. It turned out to be a good decision.

At Tui you can go to A Guarda on the ocean (zero altitude) and take the coastal route to Vigo before connecting to the interior at Redondela. It is easier on your partner. Buen Camino.
