Is it possible to walk a 100Km section e.g. to arrive at Burgos or Leon and then take buses for sightseeing thru the other routes until I arrive at Santiago, and still get my passport stamp completed?

No, unfortunately not. You have to walk the LAST 100km to Santiago. Even those people who start from another country and walk 1000's of km have to walk the last 100km to earn the Compostela.
