Where to walk in December 2021?

Hello All: Like most of you, we are ready to get out of the house and start walking again. We have about a month to walk, beginning the second week of December 2021. We are thinking about the Mozarabe because it is in the south, but of course there is the impact of altitude on climate that we must take into consideration. So, my question for you is, Where do you recommend walking in December, taking weather into consideration? BTW, we have walked numerous Spanish routes ourselves since 2007, but never in winter, and we don’t mind doing all or part of a route again. It is all a gift. Thanks!
