Walking Arles mid November to mid December

Hello everyone,
I'm wondering if it is doable to walk this route in winter, both in regards to weather and for places to stay.

The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
I'm sure it's doable but expect it to be wet and windy at times, you'll also not see many other people and I'd suggest booking your accommodation at least a few days ahead as much will be closed.

I think it also depends partly on which sections you are planning to walk.
