Accommodation open in February from Ponferrada to Santiago?

Being short of time at the moment we would like to get to Santiago in February but can only manage from Ponferrada because of time constraints. My Miam-miam dodo, Camino Frances 2007 is not explicit enough about opening times. In 2007 we ended up doing 43km one day as "Die zwei deutsch" (our planned stop) was closed. With the likelihood of bad weather to cope with I don't want that problem as well. Any ideas?
 
The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
Cete, I used the Miam Miam Dodo guide in both France and Spain, and found it to be well researched and its details pretty reliable, so if it is vague about winter opening times, it is possibly because these are in fact 'vague'. Outside of the main season, places may close when the owners want a break.
There may be also be snow over O'Cebreiro. Two recent blogs, by young Jo from Australia http://jo-camino.blogspot.com/2009/12/days-25-and-26-villafranca-vega-de.html and Johnnie Walker http://johnniewalker-santiago.blogspot.com/2010/01/what-difference-day-makes.html, give great insights into winter climbs over O'Cebreiro when the weather turns to snow. Johnnie has also turned his exploits into from Ponferrada to Santiago into a YouTube effort: http://johnniewalker-santiago.blogspot.com/2010/01/camino-hogmanay-film.html I loved reading/seeing their exploits, but I am not sure I would like the same adventures!

Thanks for that Kiwi Nomad. We have used Miam miam dodo before and know its worth. We run a Pilgrim stop in France so I know what you mean about owners having to "get away" That's our problem at the mo - we have to be back at end of Feb to fit in a trip to UK and then return here to get ready to open at Easter !!! The weather on the GR65 near Montcuq yesterday was glorious & of course we were seduced by "the call of the way".

I walked from Ponferrada over New Year and found albergues open and warm in Galicia, some hotels were closed due to the time of the year but I am sure you will find those which are now open.
