I am considering the Camino Portuguese in May of 2017. I am wondering approximately how many travellers there will be from Baiona to Redondela. Since is section is over 40km, I do not want to be alone for that distance.

When we walked this stage in May 2015 we met a handfull of pilgrims.
We , my wife and I crossed the river Minho between Caminha and A Guarda with 4 other pilgrims and met some up till Vigo.
From A Guarda to Baiona you walk through a quite remote area for a while untill you arrive at the hardshoulder of the national road to Oia and Mougas.
So I should advice to walk with somebody else if possible. See my video.

You will certainly see alot of local people and tourists as you pass through Baiona, Nigran and Vigo. The number of pilgrims is growing too so in May you should see at least a few, especially if you follow the official Coastal Way (the yellow arrows). When you are alone you have some great scenery to enjoy. The most remote stretches are between Nigran and Vigo and Vigo to Redeondela where you pass some woodlands. However, it's a very safe route and the local residents are friendly and helpful.

Why not break your journey in Caminho, for example?
This a really safe & friendly Camino.
 
I will be on the Camino Portuguese leading a tour group during that time. We walk from Oia to Baiona (19 km/11.75 miles) then from Baiona to Vigo (27.3 km/17 miles) and finally Vigo to Redondela (21.5 km/13.3 miles) - you may wish to consider breaking your walk from Baiona to Redondela by stopping in Vigo.

The Coastal route was not full of pilgrims in July when I was last there, there were many locals at the beaches but not many pilgrims. During the entire walk from Porto, we encountered 4 other pilgrims and 2 of them were walking the route from Santiago to Porto.
 
I would echo what @amourier said above. In July 2016 I walked those same stages (Oia-Baiona, Baiona-Vigo, Vigo-Redondela). The whole time I think I saw 4-5 people actually walking the route. Once you get to Redondela it is a whole different story. Expect quite a few from that point forward.

This is the Variante Espiritual.

There is also a part one from Porto but this was the caminho Português central from Porto to Barcelos and casa Fernanda. From Fernanda we jumped to the coast and continued in Viana do Castelo as you have seen yet.
