Bike Shop Suggestions for Lisbon to Santiago

Hi All,
My goodness, I beginning my trip prep and I'm vacillating between overwhelm/fear and excitement/bravery. I see how the camino begins before you even get on the trail, no? I would like some suggestions and ideas. Thank you in advance for your help.

Is anyone able to recommend a bike shop in Lisbon that could help me finish putting my bike together post flight? I think I should be able to do it, but it would be nice to have a word of mouth suggestion in case I need help.

I'll be biking the Portuguese camino in September. What is bike shop accessibility along the way like? I have a quality touring bike that I don't think will give me any trouble, but before the trip, I am planning to learn a few things to repair on the bike. These are the things...
- change flats/repair punctures
- break adjustment/cable tension for disc breaks
-cable and housing: assessment, overhaul, and basic adjustment
-derailleur adjustment: limits and tension for friction shifting
-chain repair

I think this covers a decent amount, and the rest I can leave up to a mechanic. Thoughts or suggestions for other things I need to know?
