We have a Camino Meetup Group that has meetings about once a month you may like to join.
Just plug 'Camino' into the search bar on the following link.

Just received this offer from China Southern airlines that may be worth considering. I went with them last time.

You are looking at peak season so generally not to much in the way of special fares around.
As Kanga says flying into Paris, train down to Bayonne/St Jean then fly back out of Barcelona or Madrid is a good option.
I was recently offered flights with FinnAir into Amsterdam via Helsinki, then back out of Madrid.
That was a surprise, and interesting. I'm seriously considering it.
