Kia Ora , are there any like minded pilgrims training at the moment in Brissy? Am travelling early June am wondering best method and at minimal cost to get to St Jean, i.e fly to Paris then train?
 
The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
That's usually the easiest way for Australians. Various ways to Paris - we take a stopover these days, so we're not too exhausted. Then the TGV to Bayonne, little local train to SJPDP. Check for airlines that let you fly into Paris and out via Madrid - eg Emirates - 'cause it's a long way back from Santiago to Paris.

You are looking at peak season so generally not to much in the way of special fares around.
As Kanga says flying into Paris, train down to Bayonne/St Jean then fly back out of Barcelona or Madrid is a good option.
I was recently offered flights with FinnAir into Amsterdam via Helsinki, then back out of Madrid.
That was a surprise, and interesting. I'm seriously considering it.

Cathay Pacific and Swiss Air also Cathay to Hongkong, connection with Swiss to Geneva, then to Paris - leave via Madrid to Geneva, then Hongkong, change to Cathay for last leg. Good connections, no waiting.

Also Emirates to Paris via Dubai, then Madrid to home via Dubai.

Quite a few options.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.

Hi Merianne, my camino is part of my escape from Brisbane so I only have a one way fare - which is normally quite expensive but with lots of juggling I got my costs down. I don't 'do' jet lag terribly well and so my aim is to minimise travelling. I am going Gold Coat to Singapore (Scoot Air) Singapore to London (frequent Flyer) then London to Biarritz direct on Ryan Air. I may stay there a couple of days to recover or do it in SJDP. Unfortunately travelling from Brisbane there is nothing direct to Paris. If you use the low cost carrier searches and price each individual leg rather than say Brisbane - Paris , you will get a much cheaper prices. My original plan was to fly into Paris end of May and it would have cost $1100 which is very cheap for a one way fare at that time. Hope this is useful.
