we plan to stay in Albergue Parroquial or private hostel in May, does need to prepare sleep bag by ourselves?

Generally, yes. You cannot sleep directly on the mattresses. Private rooms usually have linens, but the municipal, parochial, and private albergues do not. May can be cool or hot. A silk, nylon, or cotten sleep sack might be sufficient for your needs.

The first edition came out in 2003 and has become the go-to-guide for many pilgrims over the years. It is shipping with a Pilgrim Passport (Credential) from the cathedral in Santiago de Compostela.
Many of the private albergues that I stayed in last fall had blankets; sometimes you had to pay for them. One parochial albergue had linens. I liked having my own sleeping bag, although it was a bit warm, so next time I may just take a liner.
