Hi

Looking to walk from Rome to Santiago next year . It’s difficult to find information or suggested walking sections on the net . Has anyone done this recently that could help me out ?

I walked Arles to SDC, which forms ~1600kms of your likely route back in 2015. I had company for maybe a week of the route as far as Puente la Reina where the route joins the Frances, so it was pretty solitary. Started early September (Arles is worth a couple of days' stay) and finished around 18 November. Great weather, maybe two days rain in the whole walk. I was 61 at the time. My only warning would be mosquitoes in the Camargue. Take repellant, they're vicious. None of the walking was unduly arduous.

For Arles-Puente la Reina I used Miam Miam Dodo. Great maps. In French, but with symbols that were sufficient for a non-French speaker. I had no trouble securing accommodation. It's not a busy route.
