Where can I get the sello in A Coruña if I only have time early in the morning (until ~10am)

Try the post office, if you can't find any thing suitable the post office stamp has location and date which it all really you need on a sello. I once made a posties day when I asked her to stamp my crediencial, she'd never been on a Camino herself and was pleased as punch to be my first sello on the Levante, as we left she was on the phone to her son telling him about it, he was on the camino close to Santiago at the time.

The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
Your hotel may also have a stamp at reception (which, if it has A Coruna somewhere on it), may also do the job without needing to wait for the post office to open and then stand in line
