I'll be doing the camino after trekking in S/E asia, Nepal and India... Therefore I'll be carrying an ultra light ten and qood quality sleeping bag etc.

Can anyone advise if it's practical / safe to spend a few nights under the stars in Feb / March on the camino?

Safe? Certainly. Practical? Certainly.
European weather has been a bit odd over the last few years .. you can travel in March from St Jean to Galicia and have Spring weather all the way, or you can have snow almost to Burgos!

The question of camping along the Camino brings out quite polarised views - from the complete antis to the complete pros ... (I'm amongst the pros) ... there are pilgrims who bring a tent 'just in case' and never use it. But you are already a seasoned traveller so you will most likely be relaxed and comfortable with yourself and what you are doing day by day - so a lightweight tent would be an asset for you.

It certainly allows the freedom to move at your own pace - as long as you follow the unwritten rules about private land, leave no litter, and damage nothing I cannot see that you could have a problem. The law is more or less no camping outside of a campsite, but seasonal farm workers come in and camp ... and I have never heard of a caring tenting pilgrim having any sort of problem ..
