Probably best to take the train to SJPDP. From there you can take one bus per day to Roncesvalles - run by ALSA and leaves at 13:45. Or you can book a ride with Express Bourricot.

Vueling and Iberia do direct flights from Santiago to Bilbao. Probably the fastest option. ALSA run direct buses which will be slower but might be cheaper - that depends on the date and time.

Looks like it would be possible to go from Asturias airport to Astorga by ALSA bus - provided your arrival at the airport is not too delayed. And there are a couple of options back from Ponferrada to the airport on Sunday but not very early.
