A Coruña is an excellent choice. I spent three nights there after my second Camino and loved the Paseo Maritimo - a pedestrian walkway along the coast, the Tower of Hercules lighthouse, the lovely beaches, and the great tapas bars. And it's only 30 minutes from Santiago by train.

I think that they just say Sarria because it's the biggest town that's at least 100 km from Santiago on the Camino Francés. Same with the Portuguese Central - people will tell you that you have to start from Tui, but you can start a little farther down the trail at O Porriño.

You can pre-order from Decathlon and pick them up at the store. Or, if you all already have hiking poles you can get a cheap duffel and check in all 6 pairs of poles on your flight.
I can't imagine a Decathlon store being completely sold out of poles, but you do have to watch for opening...
