7 Days during Holy Week - Where to start?

A friend of mine and I are planning on doing part of the Camino during Holy Week. We´ll be flying to Santiago from Madrid on the night of the 14th of April when we get done with work, and we need to fly back to Madrid on the evening of the 21st. We want to end in Santiago, but we´re unsure of where we should start. It seems like we could start in Sarria if we take our time or we could start as early as O Cebreiro if we go a bit faster. We´re two young guys in reasonably good shape, so I´m kind of leaning towards O Cebreiro. What do you think?

you could skip the Madrid -Santiago flight, and take an alsa bus from Madrid to Piedrafita do Cebreiro. and start your camino there. Cebreiro is a memorable stop on the camino!!!! and do not worry about not having enough time, you can make it in 7 days
