Generally speaking you can't book in advance in albergues - it's a "first come, first served" basis. You may - only "may" - be able to telephone ahead and reserve a bed in some private albergues. Of course that then controls exactly how far you're going to travel that day. For that reason I never book in advance, other than the first night of arriving in Spain [or Portugal or France!]
For me, that's part of the pilgrimage adventure.
