Arriving June 2 in St. Jean to wherever it takes us

Time of past OR future Camino
Planned June 2018 with my rising senior daughter
Starting with my high school rising senior daughter in St. Jean. We want to focus on her being able to use her building her Spanish language competency, enjoy beautiful scenery, visit small towns, and have great food. Guess we will make a camino path of our own... not sure if this is the best thing to do or not... Will start on the Francis at St. Jean, maybe bus over to hike some of the Norte, hike in Picos National Park (not sure how many days to allow here), and do last 100K from somewhere. We have seen many pictures of Picos and don't think we can pass it up even though it looks like its a detour versus a hike through. Any advice? Again using Spanish and beautiful hiking are our goals.. and good local food which I think we will find anywhere.
