If needed due to injury, how easy is it to obtain a taxi to the next day’s destination on the Camino Le Puy between Le Puy en Velay and SJPdP? On the Camino Francés they weren’t required, but it appeared if needed they were prevalent.

Local taxis are available in France in much the same manner as Spain.
If you are not in a village or town and in remote surroundings....it will be difficult to call a Taxi..just like anywhere else. The best result may be from calling 112 (if emergency) and ask for assistance.
If there is a bar or shop open in a village, they will usually be able to contact someone local who will serve as a taxi.

The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
The strategy for success, when faced with a potential taxi need, is to start where they are -- in the larger towns -- and have them take you 10 km or so towards the next town, thus shortening your day. The opposite course (trying to call at 3pm in the middle of nodamwhere) is quite fraught and not recommended.

I know people who paid for rides with the baggage transfer companies, so that will be an option even in places without taxis or buses.
