I will be restarting my Via de la Plata in Salamanca on 7th September. Last year I was forced to quit at that point because of injury.
My question is : Can I continue to use the same credencial document, or should I start a second credencial and present two in Santiago ?

Same pilgrimage, just interrupted, so certainly you can use the same credencial.
 
I was just wondering about this, in so much as making a blanket statement about previous credentials. Wasn't it during this last year there was a little tightening up by the Cathedral in SDC about needing valid credentials? I'm sure many previously started credentials will still be valid however depending on where, or by whom, it was sourced it may be well worth ensuring it is still valid. I believe there is a list of recognized groups (CSJ, national camino organizations in countries around the world, etc) who can produce and distribute credentials and certainly can't hurt to be sure before you set off again. Hope you are able to complete your journey this time around! Buen Camino.

Since the OP walked last uear he should already have one of the "official" credenciales as the rule had already been put in place, with the bleeding credenciales.

I also restart this year's VDLP in Salamanca . Will start walking on the 9th so you will be 2 days ahead of me. Hopefully we will have some company along the way.
I'm using the same credencial. Perhaps we will meet up somewhere.
 
I sometimes carry a second (spare) credential when I restart a camino route. That way, if I run out of room on the first one, I will have the second one easily at hand.
But....most importantly....you can certainly use the original as others have confirmed.

Thanks Grayland. I took two credencials last year on my first VdlP attempt, knowing it is a very long camino and would probably need the second one. So those are ready to go again this year.

Thanks jozero. I bought my two credencials last year in Seville and they are actually labeled for the VdlP so should be valid.
I'll get it stamped again at the Salamanca cathedral so they should tell me if it is a problem.

I shall certainly try to Susie. I loved Salamanca last year and I will spend two days there before setting off again.

I used my SJpdP credencial for the whole camino to Finisterre 2015, then still had space to continue using the same one Leon to Finisterre 2016 and even Logrono, Leon, Oviedo 2017 (using spare blank sheets inside). I finally got a new on in Asturuas (at Bodeneye on the Primitivo this spring). I shall be using my Asturian credential on the Via de la Plata next time.

I think the only problem is if there is confusion at the Santiago pilgrims office about issue of the compostela. In my case I got a distance certificate on my first camino but have not visited the Santiago office at the end of my last 2 caminos so it was not an issue.

The alburgues don't care which credencial you hold and when it was issued long as you have one.
