cycling the camino - end of september

hallo!

i am planning to cycle the Camino starting 20th September with my dad who is 70 years old but quite fit. we have about two weeks, and i hope maybe someone here can help me decide on the best route to take:

for now my choise is to do the Camino Del norte from Bilvao to Santiago - if i understood correctly its about 500 KM which is exactly right for us. but i also understood it is quite a difficult Camino... what do you say? or maybe do the Camino Del Plata (lets say from Salamanca)? or From Porto? is one more difficult than the other? different weather?

if there are any other advices or things i should know or read, i would be very happy to know about.

Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
Will you be on a mountain bike on the actual trail or on a road bike roughly parallel to it? There is a world of difference.

The Camino Frances rolls pretty well on a mountain bike, while the road option is often on busy roads. Some of the other routes require a certain level of mtb skill and determination. I have not done the Norte, but I'd recommend the Frances to anyone, even a beginning mountain biker.
