Cycling the Camino Portugues from Lisbon (central route)

I'm planning to cycle the Camino Portugues from Lisbon (central route). I'll rent a bicycle, but undecided between a mountain bike and a touring bike. I will definitely avoid the climb and descend at Labruja and similar slopes over little stones. I will ride on dirt road, but mostly on asphalt and the typical cobbled streets of Portugal. Any camino friends who could give me some advice?
I 'd also need to buy a SIM card (call and data). I'll be on the road for 9 days, but 7 days would be ok too. Which company provides a better coverage?

Go with a touring bike if possible, because mountain bike tires are way too inefficient on paved roads, especially if you're hauling gear, and make sure you take a flat tire kit because bike shops are few and far between. As for sim cards, talk to your cell provider, because you may not even need one. Your provider may have signal sharing abilities with local providers. My provider did and service was the same for me as with my friends' phones that needed local sim cards. If you're lucky, you may have a free international data plan like some of my friends do with T-Mobile. They had free unlimited (but slow) data and they just spoke to people with WhatsApp and Viber.
