Gluten intolerance on the camino?

Two of our boys, 15 and 21 years old, my wife and I will be walking the camino starting in a month. We are getting so excited. This is our first camino. My wife has gluten intolerance, and we are a little concerned about this. Has anyone with gluten sensitivities recently walked the camino? What can we expect, and how can we plan ahead?

I have "gluten intolerance" in the United States because the wheat here is sprayed with bromine!
When I walk in Spain, I can eat all the wheat I want, with absolutely no problems.

I'd suggest she at least give it a little try, once you've been walking a week or so.
She might be pleasantly surprised.
