June 30-July 7 - first Camino, which route to take.

My DH and I are going to our first Camino. Due to our work and other arrangements we have only these dates: leave New York on June 29, and be back by July 10th. We would like to walk 5-7 days and have other days for something else. I understand that July is extremely busy time to walk from Sarria. We would prefer not to stay in hotels but to stay in albergues. I don't like the idea about booking the rooms upfront and would like just be and to see that the day will bring. But would not want to sleep outside also.... So the question is, should we start from Sarria or from Tui?
