Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
Hi, Maura,
Pilgrim traffic on the Lisbon-Porto part of this Camino is much lower than the rest of it, but is picking up. If you haven't seen them, the Confraternity of St. James has online guides to Lisbon-Porto and Porto-Santiago.

There's also a good guide to all accommodation on the caminho from Lisbon on the Via lusitana's web page: http://www.vialusitana.org/caminho-portugues/albergues/ Though it's in Portuguese, it's pretty self-explanatory.

I have posted this number a lot, but I think it's very helpful so I'll post it again -- from any spot in Portugal on the Camino, you can call this PIlgrim SOS line -- 915 595 213, they will answer the phone at any time day or night, and have people who speak English, Portuguese, Spanish, German, and maybe a couple of other languages. It's a good resource in case you are in a pinch, can't find the albergue, are totally lost, whatever -- the Via Lusitana runs the service and they are one bunch of dedicated pilgrims!
