Very excited to be starting my Camino in SJPDP on 24 May! Have been lucky enough to get a reservation in Orisson and will have time to explore SJPDP that morning, as well as the evening before.
Great time to walk but busy!. I would HIGHLY suggest you also make your reservations in Roncesvalles (online), in Zubiri, and in Pamplona. That's the bottleneck. After that it should open up and you'll have no problems.

In Roncesvalles, I'd buy the dinner ticket as well, but skip the breakfast. Great breakfast opportunities up the road next morning.

I stayed in Trinidad de Arre one year at the albergue right over the bridge. Loved the place. Different people run it now, but a lovely place...
