Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
...and ship it to Santiago for storage. You pick it up once in Santiago. Service offered by Casa Ivar (we use DHL for transportation).
You're off on a wonderful journey. I also walked in stages, SJPP to Burgos. Then I expected to walk Burgos to Santiago, but bad knees halted me in Sarria. So I got to return (happy day! Three times on the Camino!) and finish Sarria to Santiago.

My arrival at the cathedral was all the more powerful and emotional for the extra time I took. And each segment holds its special meaning for me.

Adapt my pace ! No rush ! I was lucky next year no blister no pain but as you said each segment is different ! I am ready for anything and the Camino has entered in my soul for ever! I can't wait leaving Burgos at dawn, looking backwards and see the towers of the cathedral fading away !
 
Those of us who walked the Camino Frances in stages were able to return each year with more knowledge and the benefit of experience.
