During my struggles to purchase a pair of tickets on the TVG in France, I have discovered the train service from Paris to Bordeaux and on to Bayonne is restricted during the months of April through June, peak season for Canadian and American pilgrims planning to walk the Camino to Santiago and those planning to train from Paris to Saint Jean PdP.

It is actually worse for those that plan to train from Paris to Bordeaux, hoping to catch a connecting train. For example those planning to leave Paris on the 9.26 train, there are only four trains operating during the month of June and some large gaps in service in the month of May.

The problem also exists for those planning to train back to Paris

You will need to check the German rail site to get this level of detail and you need to drill down on the particular train number. I doubt there is any mention of this on the TGV or SNCF sites

As Jirit mentioned work is presently in progress on the TER train line connecting Bayonne to Saint Jean Pied de Port.
