travel by bus and train... can I wait till travel day to purchase or will they be sold out Madrid to Pamplona, Pamplona to St Jean, Sarria to Madrid

Normally you can wait till day of travel to purchase.

Exception to the rule is holidays.

There are cost savings if you purchase in advance.
