To be fair, it is exactly what I intend to do on my next Camino Primitivo (since the Salvador/Primitivo combo is one I will definitely repeat). It seems that some of the best places to stay, by many reports, are between the established stages that I stuck to in the early part of my Primitivo.
I have been planning my upcoming Camino using the WisePilgrim Frances app. Unfortunately, it has stalled at Burgos and will not give me any information beyond that city. I have tried uninstalling and reinstalling the app but the problem persists. Suggestions are very welcome.

:::chuckle::: That's a bit more limiting on the Primitivo in the early stages than on the Frances. Strongly recommend Gronze plus WisePilgrim or Buen Camino to see all your possibilities.

I just tried doing this and I could not find a template. I clicked on the WhatsApp area and a blank area came up. Where in the WisePilgrim app did you click to get the template?
I made a booking today for later this month in Larrasoana in San Nickolas Albergue. I used WhatsApp in the Wisepilgrim app. There is a template and you just fill in date and name. I got a reply within 10 minutes. All done no worries.
Forget Booking.com and contact the Albergues direct instead. There are usually more beds available than have been allotted to B.Com. Use Buen Camino App, Gronze.com ( open in Google Chrome and it will auto translate to English), WisePilgrim App or whatever you choose.
