Easyjet do a flight from CDG and Air France from Orly. I don't think you'd be able to book Easyjet as part of an overall package, so if you missed the connection they would have no responsibility and you'd have to re-book. I'm not 100% sure about this so double check. Buen Camino!

Yes you can fly to Bairritz from CDG. I did in 2012.Easyjet. My plane came in late from Australia so I stayed overnight at a cheap airport Hotel. Next morning caught the airport bus to the Easyjet Terminal and caught the 1430 flight to Bairritz. Hope this helps.

Last night I booked Air France from Orly to Biarritz for $65 euro
Don't know where Orly is but from what I've read it's as close as CDG is to Paris

Yes, I think Orly is just as close to the centre, but CDG is to the north of the city and Orly to the south, so if connecting directly between the two you'd have to make sure you allowed plenty of time. I assume there is a bus service but I have no idea of schedules/timings. Buen Camino!
