Not many hotels have the ability to be booked online in Santiago. I found one site that offers this for quite a few hotels in town. Their prices seem reasonable as well.

I was looking at the prices at some of these hotels, and now in the winter season you could get a great room in a 3-star hotel for 55 euros/night. The Parador Dos Reis Catolicos goes from 199euro/night for those choosing to go for the 5-star hotel next to the cathedral.
