The Cathedral is open (to "cultural" visitors) from 14:30 to 18:00 on Sundays. From their website http://www.catedraldesevilla.es/cultural-visit/
I suspect that will be the easiest time to get a sello from the Ticket Desk. They were extremely welcoming when the Beloved and I visited and gave us free tickets for a "visit".
