Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
After checking extensively, I have come to the conclusion that Simyo is the best alternative for me....and I think for most. The reasons are :

- Prepaid (Prepago) acts just like contract ie you set up an initial usage on several items and pay this each month. This can then be adjusted all the time.
- Datausage is now 4G WITH the 4G version of sim-cards
- Its cheapest for the most data. Ie you can set up 3Gb from the start and not buy 1gb prepaid and then fill up with 200 or any other amount.
- You can teather any device to your phone (both Android and iPhone) meaning you can use the phones data with any other device unlimited up to your dataplan

I consume a lot of data, Youtube, Spotify, auto backup, iCloud, Dropbox, teathering etc. At home I consum approx 5GB data every month. So thats why its important for me with a good dataplan. If you consume less than 1gb data it doesn't really matter which provider you select.

Ps: I would STRONGLY recommend that all forum users turn on automatic upload of pictures while doing the Camino. If you loose your phone, it gets stolen or destroyed...you will still have all your pictures and videos of your trip up to the moment somethig happens.
