Which one should I walk?

I Will also be walking from Santiago to Finisterre, regardless of which camino I am doing.

The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.

Definitely Ingles the Frances will be so crowded.

I haven't walked from Sarria but did walk the Inglés last September. It was nice to walk with varied scenery and I met some very pleasant pilgrims without it feeling crowded. Although short it was challenging and nice to have an official start point by the ocean. I then walked to Muxia and Finisterre and would happily recommend this combination 😊
 
Sarria to SdC in September will be v busy so personally I’d go for the Ingles - I/we did it from El Ferrol 3 years ago and enjoyed immensely

I would prefer to do the Ingles. If only a logistical basis alone. If you are flying into SdC airport. The airport bus will drop you off at the main bus station where you catch a direct bus to Ferrol. Then you can stay overnight in Ferrol and go to the Tourist office in the harbour who will stamp your passport and give you a map on how to get out of Ferrol.
Avoid statying in Ferrol on a Monday. Most of the restaurants are closed.
