I am using this company to help me plan the trip. Everything was finalized and I paid a deposit. They were supposed to provide all the final details and collect final payment a couple of weeks ago.

They said they were just busy last week but now I haven’t heard from them. Should I just start over? I can probably do it myself.
 
The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.

If you can recover your deposit - you can do it yourself. There are plenty of well informed repeat Peregrinos on here (and me) who will help you fill in the gaps if necessary. It’s much more straightforward than it may appear.

Fortunately the deposit wasn’t huge. They have a lot of great reviews. Something must have happened so I have been patiently waiting but it’s cutting close now. We leave the US in 10 days.

I met a woman on the Francés who used this company, and she said that the price was much less than others that she looked at, but in at least one town they couldn't make arrangements for her and she had to make her own.
You can definitely do it yourself. Personally, I would want to have control of my reservations so that I could adjust things as I go. I'm in the "reserve the first few days, then book a day or two ahead as you discover your own walking pace" camp.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.

That's what I'm concerned about. I think I will just have her reserve the first few nights to use the deposit we paid. How do you coordinate sending a bag to the next town every day?

Many places to stay have the envelopes for the private companies at reception. Correos allows simple booking online in English.

Daily bag transport does, of course, require you to know where you will be staying that night.

If you can get your Camino pack down to a weight you’re comfortable carrying it gives you much more daily flexibility as to how far to go and when to stop. If you want a bag of end-of-Camino supplies you can send them directly to Ivar in Santiago who will hold it there for a modest charge.

There are as many ways of doing this as you can imagine.
