Can you tell me if there is continual cell phone service available this whole section, or are there spots were there is no connection (We will be taking the Valcarlos route). If so, can you generally indicate where the reception ceases and when it picks up again. Is there a preferred cell phone company for this area? Thanks!

Google is your friend: go to the website of your carrier and you'll find a map of coverage (Cobertura) this is Movistar 2G:

3G:

and 4G:

So the answer is "variable" and don't forget atmospherics can affect reception as well as the quality/bandwidth of your phone.

Bluey (?) areas medium intensity, greeny (?) areas high intensity

Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
Slightly off topic, but I remember years ago, before I even had a cell phone, I was walking from SJPP to Roncesvalles with a Finnish woman. It was incredibly foggy, we could see nothing, and the only sounds were cow bells. Her phone rang, and when she answered it, it was her telephone company welcoming her to Spain. So we figured that we were at least going in the right direction!
